Padlizsán krém

Put the washed eggplant in an oven til it shrinks.
Peel the skin off and chop them into small pieces.
Using a handheld blender, mix it with onion and garlic , add olive oil, til mixture becomes a creamy texture, add salt, koriander & mayonnaise.

Chill the mix and serve with toasted baguette or bread.
